🍄🌶️🥢 Bold & Veggie! (Vegetarian Feast) Vegetarian Mapo Tofu
An iconic dish from Sichuan, minus the meat. Mushrooms and beans bring the burst of flavors.
🥣 Ingredients:
– 400g silken tofu, cut into cubes
– 200g fresh mushrooms, diced finely
– 1 tbsp ginger, minced
– 2 cloves garlic, minced
– 4 tbsp chili bean paste
– 200ml vegetable stock
– 1 tbsp cornstarch, mixed with 2 tbsp water
– 2 tsp soy sauce
– 1 tsp sugar
– Spring onions for garnish
– Oil for cooking
🧑🍳 Preparation:
1. Heat oil in a clay pot, sauté ginger and garlic until fragrant.
2. Add mushrooms, stirring until they’re softened.
3. Stir in chili bean paste, then pour in vegetable stock.
4. Gently place tofu cubes in the sauce, careful not to break them.
5. Simmer for 5-6 minutes, allowing tofu to absorb flavors.
6. Mix in soy sauce and sugar.
7. Thicken with cornstarch slurry, stir until shiny and sauce coats tofu.
8. Top with sliced green onions, serve piping hot!

Did you know? “Mapo” means pockmarked old woman, named after the lady who supposedly invented this dish!
