To end our Hanoi street food week, Chè đậu xanh is a comforting dessert perfect for any season.
🥣 Ingredients:
– 1 cup mung beans, soaked overnight
– 3 cups water
– 1/2 cup sugar (adjust to taste)
– 1 can coconut milk (400ml)
– Pinch of salt
– Crushed ice (optional)
– Mint leaves (for garnish)
🧑🍳 Preparation:
1. Rinse the soaked mung beans and boil them in 3 cups of water until tender.
2. Add sugar and a pinch of salt, continue to simmer for 10 minutes, stirring occasionally.
3. Pour in the coconut milk, heat through, then remove from the stove.
4. Ladle the soup into bowls, serve warm or with crushed ice for a refreshing twist.
5. Garnish with mint leaves and capture the vibrant green of the beans contrasting against the creamy white coconut milk – imagine a bustling Hanoi street scene as your backdrop!
