🥭🌶️🍚 Bold Flavors Ahead! (Asian Fusion Challenge) Sweet Chili Mango Rice Pudding
Thai-inspired sticky rice pudding paired with ripe mango and a drizzle of spicy sweet chili sauce.
🥣 Ingredients:
– 1 cup glutinous rice
– 1 can (400 ml) coconut milk
– 3/4 cup sugar
– 1/2 teaspoon salt
– 2 ripe mangos, sliced
– Sweet chili sauce, for drizzling
🧑🍳 Preparation:
1. Rinse the rice until water runs clear. Soak in water for 1 hour, then drain.
2. In a saucepan, combine coconut milk, sugar, & salt. Bring to a simmer, stirring to dissolve sugar.
3. Add drained rice to saucepan. Stir & cover. Simmer for 20 mins, or until rice is tender & creamy.
4. Let the pudding cool slightly. Serve in bowls, top with mango slices in a vibrant pattern.
5. Finish off with a zigzag drizzle of sweet chili sauce.

Did you know? In Thailand, mango with sticky rice is usually a summer treat, but we’re giving it a spicy twist!
