Matcha & Red Bean Mooncakes (抹茶紅豆月餅)

🍵🌙🍡 (Asian Fusion Challenge) Matcha & Red Bean Mooncakes
Experience the fusion of Japanese matcha and sweet red bean in one bite!

🥣 Ingredients:
– 150g all-purpose flour
– 50g matcha green tea powder
– 100g caster sugar
– 100g unsalted butter, softened
– 1 egg, beaten
– 200g red bean paste
– A pinch of salt

🧑‍🍳 Preparation:
1. Preheat your oven to 180°C (350°F).
2. Mix the flour, matcha powder, and salt in a bowl.
3. Cream the butter and sugar until fluffy, then gradually mix in the egg.
4. Combine the wet and dry ingredients to form a smooth dough.
5. Divide the dough into 8 pieces and flatten each into a small disc.
6. Place 25g of red bean paste into the center of each disc.
7. Fold the dough around the filling, and shape into balls.
8. Press each ball into a mooncake mold to form the shape, then remove.
9. Place mooncakes on a baking sheet and bake for 20 minutes.
10. Allow to cool on a wire rack, then cut in half to reveal the stunning matcha-infused dough and sweet red bean center. Serve on a plate scattered with tea leaves for an artistic touch.
