– 1/2 cup tofu, cubed
– 1/4 cup green onions, finely chopped
– Seaweed (optional), to taste
🧑🍳 Preparation:
1. In a pot, bring vegetable broth to a gentle simmer (do not boil).
2. In a bowl, dissolve miso paste in a bit of the hot broth until smooth.
3. Sift matcha powder into the pot, whisking until well combined.
4. Add the dissolved miso to the pot and stir, making sure not to boil the soup as it can affect the flavors.
5. Add tofu cubes and heat through gently for a couple of minutes.
6. Serve in bowls, garnish with a pinch of green onions, and if desired, a twirl of seaweed. Mimic the earthy green swirl and garnish as seen in our perfect shot!
