🍳🥟🧧 (Guangzhou Dim Sum Delights) Egg Tart
Crispy pastry meets silky egg custard in this dim sum dessert—a true representation of Guangzhou’s colonial influences and culinary adaptiveness.
🥣 Ingredients:
– 1 cup all-purpose flour
– 1/2 cup unsalted butter, cold and diced
– 3 tbsp powdered sugar
– 1 egg yolk, beaten
– 3 eggs
– 1/2 cup superfine sugar
– 3/4 cup hot water
– 1/2 cup evaporated milk
– 1/2 tsp vanilla extract
🧑🍳 Preparation:
1. Combine flour, butter, powdered sugar, and yolk to form a dough. Chill for 30 mins.
2. Roll out dough and line tart molds. Pre-bake at 200°C for 10-15 mins until golden.
3. Whisk eggs, superfine sugar, water, milk, and vanilla. Strain into shells.
4. Bake at 180°C for 15-20 mins. The custard should be just set.
5. Serve in a bamboo steamer for that traditional touch under soft light to highlight the smooth texture.
