Almond Jelly with Lychee (杏仁豆腐)

🍮🌱🥥 Vegetarian Feast Delight: Almond Jelly with Lychee 🥥🌱🍮
A refreshing and light dessert made from almond milk and garnished with sweet lychees, often served chilled as a palate cleanser or sweet ending to a meal.

🥣 Ingredients:
– 500ml almond milk
– 100g sugar
– 10g agar-agar powder
– 1 can of lychee in syrup
– Mint leaves for garnish

🧑‍🍳 Preparation:
1. In a pot, mix almond milk, sugar, and agar-agar powder.
2. Bring to a simmer over medium heat, stirring till sugar dissolves.
3. Pour into a mold and chill until set (about 2 hours).
4. Cut the jelly into cubes and place in a delicate glass bowl.
5. Top with lychees and drizzle some syrup. Garnish with mint leaves.

😅 Bonus:
Did you know? Almond Jelly, also known as Annin Tofu, is not tofu at all but a tribute to its silky-smooth texture.
